Ingredients
1 cup basmati rice
2 cups water
1 teaspoon salt
1 ½ cups brown lentils
2 tablespoons canola oil
2 onions, minced
1 teaspoon black pepper, ground
1 ½ tablespoons cumin, ground
Directions
Put 2 tablespoons of oil into a saucepan and heat. Add the onions and cook on medium/high heat for about 10 minutes until the onions are browned. Stir in rice for a few minutes. Add 2 cups water, cumin, pepper, and salt. Bring to boil, then reduce heat to low, cover, and simmer for about 25 minutes until the rice is tender and all the liquid has been absorbed.
To cook the lentils, wash lentils and place in a pot. Add a pinch of salt. Cover with water and let it boil for 20 minutes.
Drain lentils and mix with rice.
Serve with yogurt or hot sauce. Pair it with a colorful salad.
