Roasted Green beans with Almonds

Ingredients:

2 lbs French green beans

1 lb whole blanched almonds

2 Tbsp olive oil

1 teaspoon basil

1 teaspoon garlic powder

1 teaspoon rosemary

Avocado spray

Salt & pepper to taste

Directions:

  • Preheat the oven to 425 degrees F. Coat a sheet pan with avocado spray.

  • Arrange the green beans in a single layer on the sheet pan.

  • Drizzle with 1 tbsp olive oil. Add garlic powder, basil, thyme, rosemary, salt and pepper. Mix well.

  • Place the pan in the oven and bake for 15-20 minutes or until green beans are tender and lightly browned. While green beans are cooking, place 1 tbsp olive oil in a pan. Add almonds and sauté for a few minutes until turns light brown. Place green beans in a serving plate. Add almonds on top and enjoy!

Roasted Eggplant

Roasted Eggplant

Ingredients:

2 large Chinese eggplant

1/3 cup white vinegar

7 garlic cloves

Salt & pepper to taste

Directions:

  • cut into thick 1.2″ slices

  • drizzle with olive oil, sprinkle with salt and pepper on each side 

  • spread out on tray and bake at 450°F for 20 minutes, flip, then for another 10 minutes, until the eggplant is super soft and caramelized on the edges

    - place eggplant in serving dish. Smash garlic cloves with a wide knife and add To eggplant. Add vinegar and serve.

INGREDIENTS

2 medium onions, diced

Canola oil

1 small bag red lentils

3 fresh lemons

2 carrots, peeled and diced

1 white potato, peeled and diced

1/2 cup short grain rice

Salt, pepper, cumin

2 pitas, toasted

DIRECTIONS

Sauté onions in oil. Add carrots and potatoes. Add 1/2-1 cup water and cook until partially softened. Add rice, lentils, water (3 times more than mixture in pot), salt, pepper and cumin. Continue cooking until all ingredients are softened. Blend with immersion blender. Add more water to achieve desired thickness.

Finally, add fresh lemon juice. Serve with toasted pita on top as croutons.
