Ingredients:
2 large Chinese eggplant
1/3 cup white vinegar
7 garlic cloves
Salt & pepper to taste
Directions:
cut into thick 1.2″ slices
drizzle with olive oil, sprinkle with salt and pepper on each side
spread out on tray and bake at 450°F for 20 minutes, flip, then for another 10 minutes, until the eggplant is super soft and caramelized on the edges
- place eggplant in serving dish. Smash garlic cloves with a wide knife and add To eggplant. Add vinegar and serve.
